上年年中得知Kashiwaya 遷出香港嘅時候我係非常傷心😵‍💫 長本料理長同原先班底今年係Kashiwaya舊舖位置繼續本着不時不食嘅原則開設「旬」料理店😍 同以前一樣都係每個月根據時令食材轉menu 餐廳重新裝修後環境依然簡潔典雅🥸  九月中國有中秋節 日本就係夜長月 係最佳嘅賞月時期🌕  餐廳今個月menu嘅選料都偏淡口味 長本料理長嘅心機同技巧都已經係出晒名 當然十道料理呈現方式都同秋收祭月相映成趣😇 講其中當晚好欣賞嘅3道:  👉🏻 替: 炸帆立貝霰餅/舞茸/蛋黄酢  選用北海道嘅帆立貝 沾上薄薄一層霰餠碎去炸🤤 咬落香脆唔油膩 而裏面嘅帆立貝依然嫩口 可以沾蛋黄醋汁食 而一旁配嘅係富山県産嘅舞茸😳  👉🏻 煮物椀: 鱧焼目/松茸/玉子豆腐   煮物碗一向都係長本料理長最得意嘅料理之一🤘 淨係烹餚高湯都已經十分講究 最後會加入鹿兒島鰹魚乾 幸福嘅係可以望住師傅整湯 仲有得試飲一碗昆布湯  煮物椀打開碗蓋淡淡柚子香撲鼻🤭 好鍾意高湯飲落去窩心暖暖嘅感覺🤗 伴隨清甜高湯嘅有長崎県的鱧魚 松茸 但最愛係自家用鷄蛋混入高湯做成嘅玉子豆腐 滑口香甜   👉🏻 超嫩口嘅宮崎県産和牛🐮 長
