We recently dined at The Merchants and had an amazing experience. This restaurant offers a delightful dive into Shanghainese cuisine, with some lovely influences from Jiangsu and Zhejiang provinces. One standout dish was the Traditional Deep-fried Pomfret in Sweet Soy Sauce. The fish was crispy on the outside and tender on the inside, paired perfectly with the sweet soy sauce. We also really enjoyed the Smoked Pigeon with Soy Sauce and Spices; it had a wonderful smoky flavor and rich spices. The Drunken Crab with 25-year Hua Diao Wine was another highlight, with sweet crab meat complemented by the complex flavors of the aged wine.
The Steamed Antarctic Cod with Rattan Peppercorns was delicate and tasty, and the Local Lobster Stir-fried with Seafood Sauce was succulent and packed with umami.
Kudos to the chef for the fantastic dishes and to the staff for their attentive service. If you’re a fan of Shanghainese cuisine, you should definitely check out The Merchants.
