今次先講omakase下半部的壽司篇:

石門鯛

>打頭陣是這款岩手県出產的石門鯛,味道淡麗而油份重,見脂肪和魚肉相間便知入口即化;頂端點上醬油昆布漬,能帶出魚的鮮香。師傅會按照客人飯量、味覺相應調整去迎合客人口味

北寄貝

>北海道出產的北寄貝,看著師傅在我面前開殼,切片後往枱上狠狠一擲➰,還很新鮮的貝片即神經反射的向內縮起來!深紫紅色的北寄貝光滑晶瑩、結實鮮美的螺肉入口爽脆清甜,鮮味程度非坊間紅色已煮熟的版本可比擬

赤鯥

>這是日本最高級別的食材、油份重的白身魚。師傅先用火槍炙燒一下外皮釋出油脂接著輕抹醬油;入口魚油味甘腴鮮甜肥美,潤厚魚香在口腔內久久不散,真是omakase壽司中的一大高潮位

中拖羅

>乍看好像是尋常的食材為何在omakase出現?原來師傅花了心思把這款sushi轉化成創新口味,亮點就是用咗沖繩菠蘿胡椒提味!此魚本質因素味道是會帶酸性,而沖繩菠蘿出名清甜、混入辛口的胡椒做成醬,見師傅把醬輕輕在壽司上點一下、醬的清新甜美中和了魚的酸味,令緋紅色拖羅入口更油潤甘香!據師傅講這個特製醬汁更是這店首創

金目鯛

>另一款淡雅的白身魚,師傅亦用火灸燒魚皮的位置令油份溢出,把味道昇華至更高層次;配搭柚子胡椒做提味,魚肉食落爽甜香滑

牡丹蝦

>師傅先把蝦膏用醬油調味,用火輕炙不斷攪拌控制蝦膏狀態不會太熟變苦,保持嫩滑口感;晶瑩剔透的牡丹蝦輕塗醬油然後將蝦膏放面,再配上魚子醬。雪白的蝦肉入口軟柔富彈性也很creamy,輕炙過的蝦膏異常濃稠像忌廉般細滑,加上甘香的魚子醬提味、令這件壽司味道更上一層樓,不愧為這店的名物,據說很多客人都為著想品嚐這件壽司慕名而來

海膽手捲

>重頭戲嚟喇,最放肆嘅海膽手捲!這優質uni被風趣嘅遠師傅形容為海膽界的[Celine]、好貼切!師傅夾起成行密麻麻嘅「雲丹」捲比我食!這拍賣級數的海膽入口即化,甘甜得嚟又有海洋鮮味,質地細滑有如鹹的忌廉,回甘悠長一級捧!紫菜也非等閒之輩,切下去“咔嚓”一聲,咬落口感像薄片般脆口不會腍,這高質素的海苔與上等海膽非常匹配

魚湯

>濃郁杰身充滿魚油香的湯用上大量魚肉魚骨熬製了幾個鐘、湯面飄著一層魚油精華未飲已聞到香味;裡面有嫩滑的豆腐粒和清甜日本薑絲,這湯神還原媽媽煲嘅老火湯味道,很有“家”的感覺,喝下去很舒服、好甜好好飲
