I've been to Coyote three times now, and I am of the opinion that it's the best Tex-Mex place in HK. It's certainly better than Agave (horrible), Taco Loco (horrible), Tequila (suspect), Taco Chaca (OK), and Carumba (OK). Coyote actually knows what an enchilada is-- which is more than I can say for the "baked flour-tortilla tacos" you get at places like Agave. Grilled Chicken Chimichanga

I have such trust in Coyote that I went out on a limb and ordered something new: a chicken chimichanga ($168). This obviously doesn't hold a candle to the stuff you get in Arizona, but it was surprisingly good (I predicted it wouldn't be when I ordered it).

A chimichanga is a deep-fried burrito. Not a Mission burrito, so the fillings are principally meat and beans. In this instance it was topped with sour cream, guacamole, and salsa. The chicken inside was called "grilled" on the menu, but it was tender and falling apart. It had a kind of thick sauce with it which tasted a little like cream of chicken soup, which was alright, I guess, but nothing I'd rave about. The guacamole and salsa on top were good and added a needed dimension of flavor to the thing-- it could have used more guac, imo. The rice it came with was on the dry side and the beans were unspectacular.

On the whole I'd say it was good and definitely not great. B-

The margarita was strong, decently-sized, and only $70. I guess in this part of Wan Chai, competition for drinks drives prices down.

As I said, this is my go-to for Tex Mex. I wouldn't recommend it over even an average Tex Mex place in the American southwest, but if you're out here in HK, your options are few, as I'm sure you've realized.
