Got invitation to this restaurant unexpectedlyThe entire dinner was also full of surprise!As I only expected canape and drinks, never thought that would be a 7-course meal!The restaurant had 2 levels, all the guests invited were seated around the bar table at the centre of 2nd floor. The restaurant had 2 levels, all the guests invited were seated around the bar table at the centre of 2nd floor. The bartender was making tonight's cocktail while we're waiting for the event to start. This is my first time to try a drink made with Nitrogen dioxide, it was used to hold the shape of green apple slices as blossom. The taste is sweet and very appetizing.
After a brief introduction from the Chef Chris, he started to make dinner in front of us inside the bar kitchen.
1) Starter: Oyster The oyster is of size no.3. not too big. There're various sauces for us to pair with the oyster. Eg lemon slices, shallot vinegar, japanese seaweed, salmon eggs, soysauce, tasbaco etc.
2) Spiced Seared tuna, fennel dill and orange salad, soft herb mayonnaise Very tender tuna with great portion of spice on the outer skin.
Yet disliked the mayonnaise due to personal preference.
3) Sticky BBQ Pork belly, butternut squash and cumin puree, spring onion and chilly Smooth and sweet butternut squash puree
tender pork but the belly just too fatty for me...
4) Grilled Norwegian Salmon with white bean and chorizo stew, olives, tomato and lemon Well cooked salmon. Totally different from what are served in those chain-restaurants. Tender inside and crispy skin!!! Like the beans in salsa underneath!!!
5) Fillet of Beef, Smoked potato, spinach, forest mushroom ragu, shallot jus They served the beef fillet cooked to medium-rare. Soft and tender, juicy inside! Just well! Tasty spinach and mushroom ragu!! Yummy!

6) Coconut & vanilla panna cotta, chocolate olive oil mousse with sea salt and popping candy
The surprise of this plate is the popping candy in chocolate flavor! The coconut is not so outstanding but the mousse is perfect. Great combination of popping candy and panna cotta =) 7) Red wine, Ribena and cinnamon poached pear, Mascarpone foam, toasted almonds
The bright of this dessert is the cinnamon flavor!! Just right softness of pear and just right sweetness !! BEST DINNER EVER !!!
