對西安菜的認識我只限於網上瀏覽, 究竟他們的真實味道又是如何, 我確摸不著頭腦 .... 陝西哨子麵哨子麵要有三大特點, 首先湯的味道要有齊酸、辣、香;另外麵條是要夠幼身及嚼勁, 基本上哨子麵的份量是不可能多, 因為「哨子」即是吃麵時要好似吹哨子般用力一吸, 完全把麵條吸入口裏才行;再者湯面要有層油才能把麵及湯的熱氣封住, 不容易放涼 ~配菜也很講究 , 要在菜色上集齊紅、黃、白、金、黑、青 , 七彩斑斕 ~本篇完 ~
