Another one of Causeway Bay’s endless hidden Japanese restaurants, Sushi Imamura is a restrained affair in the Macau Yat Yuen center next to Sogo.Japanese through and through, it’s minimalist but comfortable. Japanese through and through, it’s minimalist but comfortable. I sat at the sushi counter, where Chef Imamura engages comfortably in Cantonese, English and Japanese. Service is great, and subdued in a very sushi-bar sort of way. Plenty of alcohol choices were available including an extensive sake list. There were only 3 choices for dinner, a sushi-only omakase, a sushi/sashimi version and another I don’t remember. I ordered the sushi-only version.

The meal took about 2 hours in total and gave me ample time to think about the meal. Sushi remains a curiosity to me, and though I’m no stranger to it, there is still so much I don’t understand. Seasonality of the seafood is paramount, yet I wonder what sushi bar would dare not to offer the standards, which always seem to include Tuna Belly, Sea Urchin, and Salmon Roe. Is that basically priced in all the time? I’d never complain about receiving any of them, but I wonder how much of omakase has become an expectation and how much is really the best of the season.

World’s sweetest orange

I’ve put in some pictures of my favorites. Wonderful variety of fish with representation from all sushi groups– my favorites as always are the shining fish, gizzard shad and horse mackerel, though everything was delicious. 

It is a wonderful sushi restaurant and probably my favorite in HK, along with Ikkei in TST.
