Marugame Seimen has a chain of restaurants all over Hong Kong. Serving various types of udon for a low price. You then grab your own tempura items for added price and you make your own meal.The first time I tried it was in Tsim Sha Tsui. I thought it was fairly ok. Not great but for a cheap meal, this was good enough for me. Now they have opened up in Hysan Place's food court and as it's close to where I live, I ate here one day for lunch.I chose the half boiled egg udon in a regular size ($38)

I chose the half boiled egg udon in a regular size ($38). You grab your own toppings at the side station. The udon was ok for food court. It was still chewy and not over cooked.
This is fried squid rings ($10). It was ok. A bit on the chewy side.
