When I craved ramen in Hong Kong, Domon was always my first choice until I discovered Sanpachi ramen. The ramen noodles here are flown from Hokkaido and are always cooked to al-dente texture. The soup bases here are up to at least average local Japanese standards - generally rich but not overly salty - but one thing I've noticed is that the ramen tend to be served at hotter (hence better) temperature whenever the Japanese boss is present. They also do lunch sets here and most of the time I'd order cha-shu rice or cha-shu mayonnaise nigiri - they're both delicious although I prefer the latter
Will probably come again soon.
