I've been to this shop many times and what I can say is - finally there is a decent place for noodles in Tin Hau (as an alternative to 清湯腩)!!My favourite here is the swiss style chicken wings in clear broth. For $26 you get 3 chicken wings with noodles in your choice of soup. For the broth you can choose from clear broth/清湯, spicy and sour/酸辣 or spicy/麻辣. If you choose spicy you can also ask them for the level of spiciness you require(大,中or小辣). Personally I'm not a big fan of the spicy broths, but I've been told that the 酸辣 is quite good.
One of my friends had the 紅燒燜肉 which she said was very tender. My other friend also had the 瑞士雞翼but with the 麻辣湯底. Don't be put off by the colour, even though I'm not a big fan of spicy food this actually smells really nice!
For $5 more you can add an extra item to your noodles. Normally we like to order the 五香牛展 as a side dish since they give you quite a decent proportion. Most places in Hong Kong slice it really thinly so you don't really taste anything except the marinade, but here the taste is really good - possibly one of the best 五香牛展 I've tasted in Hong Kong.
Environment: The shop is nice and bright - looks clean.
Staff: Really friendly - more than happy to give you recommendations.They did have some problems when they first opened up (as some reviewers experienced), but seems like they changed the shop manager and staff and things are much better now.
Other recommendations: 秘製豬扒 (not too oily or dry), 腩肉 (not too oily or dry), 蒜泥白肉 (you might want to ask them to give you less oil on this one), 鹵蛋, 墨丸is not bad BUT definitely definitely have the iced peach honey drink - it's damn good!
