Refreshing starter to begin the meal.
-Hotate x Mirugai Sashimi
Topped with lime foam - both were very fresh and firm in texture.
-Madai
It had a mild and sweet flavour. Went so well with the vinegar!
-Shirako Tempura
Love the contrast in texture between the soft Shirako and the fried batter. Surprisingly good!
-Otoro
Seared with binchotan - this had added a deep smokiness to the fatty cut of Otoro. All in all a delicious piece!
-Smoked Sawara with Garlic Soy-sauce
Great umami favour with almost flaky texture.
-Seko kani with fried Sawagani 🦀
Mixture of Sotoko, Uchiko and creamy innards. Great on presentation! The chef has removed the meat from the crab, and put together with some crab yolk. Mixing together, this dish is truly rich in taste. The fried Sawagani was the cutest little thing! 🤭it was deep fried to a crunch, with a bit of meat in the middle.
-Tachiuo Harumaki
A yummy Japanese take on the classic spring roll. This Harumaki (spring roll) was made with Tachiuro and mushrooms wrapped in a crispy shell.
-The set then came with 6 pieces of sushi including Ika, Buri, Botanebi, chutoro, Saba and Uni. All were good but the uni was pure haven - very creamy in texture and had a sweet bitterly flavour.
