As I was sitting at Cookie DPT reading my novel, I glanced over my shoulder and saw an interesting and familiar HK style dessert “The HK style French toast”, an iconic dish symbolising “east meets west” when HK Dai Pai Dong cooks tried to replicate the luxurious British dessert with more affordable white bread and deep fried woks, the result was magic made at a budget - a crispy yellow crust surrounding what would normally be peanut butter filling. I was ravenous, I decided to order one and to my luck the restaurant made an extra one for me to try for free!!! My impression of it was that it was thick, the surface was covered with honey and whipped cream, the crust was crispy and it locks the apple and cinnamon filling allowing it to retain its heat. As I cut into the dessert, it held its form, it was not soggy or waterlogged, the heat from the apple and cinnamon filling slowly vaporises and you could smell its luscious aroma. Now for the moment of truth, as I bite into it I felt the crispy texture with its apple and caramel dulcet, hint of cinnamon spice and its savoury feel, the marriage of taste was simply ambrosial.
