I had the recent pleasure of visiting Chullschick, an establishment that prides itself on offering rich authentic Peruvian cuisine. The restaurant's interior and ambience are welcoming and unique, allowing guests to instantly feel the charm of casualness and simplicity in South American tropical countries. A perfect appetizer that left a lasting impression. The mashed potato was creamy and smooth, offering a perfect base for the tart and tangy seabass tartare which was fresh and well-seasoned. The kalamata olives added a briny touch, while the togarashi mayo brought a slight heat and spice to the dish. Garnished with microgreens, all the colors added a pop of vibrancy that made the dish even more inviting.

A crescent-shaped golden brown pastry shell stuffed with minced beef, egg and onion. The pastry itself was perfectly crispy and flaky, and each bite reveals the complexity and depth of flavours present within, while the chimichurri sauce atop added a tangy and slightly spicy kick that brought all the flavors together.

The presentation was very eye-catching, with the vibrant green of the coriander and the rich brown of the duck meat creating contrasts on the plate. While one constituent, the smoked duck breast, lacked distinction in flavour and texture, the remaining components coalesced harmoniously to produce a more than satisfactory attempt at the rice dish. The duck leg confit imparted its lush fattiness and savoury depth to the rice, and the duck egg enriched the grain with its distinctive richness.

Crafted from purple corn, chicha morada is traditionally infused with cloves, cinnamon and nutmeg to produce its deep purple hue and complex aromatics. While tasty beverages of this type can often lean overly sweet, this beverage here struck an excellent balance, with the fruity notes of the purple corn coming through clearly against a backdrop of warming spice tones that lent just the right suggestion of gravitas.
