The cheese tart we had last time was so amazingly good that we decided to try this moist soufflé cheese cake at $25. Covered by an apricot nappage, most of it was soufflé cheese with sponge at the bottom. It was really quite cheap but with a reason, as it was not so dense with pretty airy cheese. So it was not thick at all - not satisfactory enough for a cheese lover like me. That said, the flavour of cheese was reasonably rich for a soufflé cheese cake like this. I didn’t find it too greasy at all after eating. The apricot nappage didn’t taste apricot at all. Although not my favourite, I think it was ok, just that I wouldn’t encore. Next time should try something else.
