First made with just grain flour and water, the Europeans once tried to add salt and wine to the mix. But not until 1814 did the kitchen helmsmen invented the great Liège waffles, with brioche dough as the base, making it very dense and firm with a crispy crust!

Sadly when waffles were introduced to The States, the Americans had their twist to make waffles soft and loose, straying far from tradition. Ironically, that’s what Hongkongers like the most. What a pity for Liège waffles!

Today is exactly one month after the Waffle Day, but it’s never too late to uphold the beauty of traditions!

Found this lovely café weeks ago but couldn’t get it out of my mind, so I decided to pay my second visit. So no more horseshit on the interior, let’s get straight to the food!

Cheddar cheese is baked to golden yellow and seductively lay aside the cute waffle, with balsamic vinaigrette drizzled over. Gently lifts open the cheese layer; you can see beautifully cut pears neatly placed on another larger waffle. A handful of sautéed red onion is placed there as the last touch.

All ingredients together composed a Harmonic Sonata. Cheddar cheese came first to give the saltiness before the sourness of vinaigrette took over. Sweet and juicy pears joined in to make the piece even more fruitful while sautéed red onion added on for the richness of texture. In the end they were all wrapped up by the herb seasoned waffle which was intense and dense, dominating the sensations all over my mouth.

I would say this choice was even better than “All the Best” I tried last time. Always be adventurous on your food – and be stunned!
