Their pizzas were definitely better than the ones from cheap pizza delivery places like Pizza Hut, PhD, Pizza box, etc.  but overall the crust let them down. Ordering pizzas delivery, I wasn't expecting pizzas that were soft, crispy and airy, I know it would be impossible because you won't get a pizza with any crisp when the pizza has to sit in a pizza box. Ordering pizzas delivery, I wasn't expecting pizzas that were soft, crispy and airy, I know it would be impossible because you won't get a pizza with any crisp when the pizza has to sit in a pizza box. The pizzas I got were just not soft and airy enough, the cornicione (outer ring crust) were incredibly dense. I don't think they would get their hydration levels wrong since they probably make hundreds of kilograms of dough per day. If I had to hazard a guess, I would say the dough probably didn't get enough fermentation time and was underproofed.
