The reward I got for bringing my little nugget to Hong Kong Zoological and Botanical Gardens this afternoon was an afternoon tea. And I recalled seeing the sweet corn mousse at some point as well.
I guess the timing was right to get reacquainted with some of these cakes.
Meltly Corns ($48) - One of Chef Ma's favorite according to numerous reports. This is a sweet corn lover's dream having the sweet corn mousse nicely paired with panna cotta and sweet corn grains filling. Personally, I'm a fan of this creation but they could definitely improve on the crumble at the bottom, which I thought was a little on the hard side.

This had the making of a really nice strawberry watermelon cake but the almond dacquoise (which tasted more like a sponge cake) and rose cream kind of let it down.
