I was really glad this was on the menu because it reminded me of this noodle shop that has closed in WanChai which served tossed noodles with dried fish.

The broth was really nice because the dried fish had a bitter salty taste, which gave the e-fu noodles a nice flavour.

Pork trotters in fermented red beancurd sauce:

The pork trotters were just amazing and you could see that they were vibrant in colour.
They were extremely soft and gelatinous with a strong red beancurd taste and a lovely sticky texture.
