Salmon rillette on muffin. Rillette is a preservation method similar to confit where meat is seasoned then slow cooked submerged in fat, cooked at an extremely slow rate for several hours then shredded.
Beetroot relish on the side- quite interesting with the picked taste. Balanced well with the salmon.
Mains :
Half roast chicken, served in 3 distinct pieces: wing, thigh and breast. Mashed sweet potato and spinach on the bottom.
What completed the dish was the tasty jus gras (literally translating into "fatty juice") which consisted of the dripping and gravy in the bottom of a roasting tin.
Grilled sea bass with orzo (a form of short-cut pasta, shaped like a large grain of rice). On the top: sauce vierge (a French sauce often made from olive oil, lemon juice, diced tomato and chopped basil).
Dessert: chilled coconut rice pudding with mango.
Coffees not included.
In summary: pleasant lunch. Good value for money.
