I always have an impression about vegetarian food (either for vegan or octo vegetarian), they should be something really "green", less oil, more veges and not meat at all. thinking about it, the purpose of converting to vegan or vegetarian is for the purpose of health and religion, but when it come into health, those oily deep fried stuff may not be an ideal. For religion wise, why need to have "fake" meat to satisfy ur desire?
