To promote a new salt and sugar reduction (RSS) dietary culture and living style to the people of Hong Kong, the Environment and Ecology Bureau, the Committee on Reduction of Salt and Sugar in Food and the Centre for Food Safety of the Food and Environmental Hygiene Department have launched the "Less-Salt-and-Sugar Restaurants Scheme" ("Scheme"). Restaurants participated in the Scheme will offer less salt or sugar options to the consumer or even tailor-make less salt or sugar dishes in designated restaurants. 而緊接住嘅就係先來嘅六點刺身,師傅手勢純熟地將新鮮嘅金線鯛刺身送上,肉質彈牙,加埋自家製嘅醬汁入口感覺更加清新,在口中慢慢咬時個魚味更出!而另一件就係利用了由九洲直送嘅太刀魚做成嘅天婦羅,再加上北海道嘅馬糞海膽而做成嘅刺身配搭,太刀魚夠晒鮮味重要係啖啖肉入口食得分外滿足,加埋以天婦羅嘅食法取代刺身真係再進一步帶出魚肉鮮香,而為了增加味蕾嘅感覺,上面嘅北海道海膽質感軟滑,味道鮮甜濃郁,一冷一暖嘅刺激,加埋在口中混合一起時真係分外美味!

當差不多完成時,師傅已經開始準備下一份刺身
有池魚配上芽蔥,師傅用上了呢個配搭係因為本身魚味較濃,所以配上芽蔥中和了本身魚嘅腥味,而魚身肉質就夠晒嫩滑!

平政魚就先燒一燒,未入口就已經嗅到好香,入口時除了味香外,肉質亦好有彈性,魚味濃郁!

再出現就係利用北海道毛蟹,拆肉再配埋佢嘅蟹膏 刺身,賣相已經好精緻,食時再配埋個自家製造嘅醋食,蟹肉更加鮮味,而蟹膏亦好鮮味濃郁,但食完不會覺得油膩!

跟住就係廣田真蠔,新鮮大隻夠晒飽滿,配上高湯浸住,入口時外實內軟夠晒蠔味而且重好creamy!

再來鰹魚,用了煙燻嘅方法處理,本身鰹魚嘅魚味較重,配上日本洋蔥入口,味道更清新而肉質都爽口!

刺身最後就係大拖羅,用脆口嘅紫菜卷住件大拖羅入口,更加增加口感,而入口即溶充滿油份,而大拖羅與紫菜之間有片紫蘇葉中和食後嘅油膩感覺!

刺身完了後就先上本日之一品,用了彈牙爽口嘅龍蝦肉,天婦羅嘅蘆筍、芋頭,而個汁就用龍蝦餚出來,所以味道夠晒味道!

之後就先上個沖繩海草,味道軟滑軟熟,帶點酸甜夠晒醒胃!

而吃壽司時,師傅一做完就會即時交到客人手中入口,第一件就係用白蝦做成,用了少少海鹽在白蝦上,加上了橘子汁入口,口感帶黏口,而加上飯身用了赤醋飯所以會帶點酸甜嘅感覺!

第二件壽司就係用了淡路島嘅活赤貝,入口爽口甜身好有口感!

完了壽司後,就係呢到最出名嘅雲丹盛出現,見到師傅取出嘅海膽感覺已經好開心,因為用上北海道赤海膽,將赤海膽鋪滿了整個碗,差不多用上了大半板海膽先可以做到呢個效果,而最後上面再加多隻甜蝦,嘩真係望主都已經覺得超正!當然入口時啖啖海膽嘅感覺,真係超正!海膽味道鮮甜,口感幼滑,而隻甜蝦亦夠鮮甜美味!呢個真係要慢慢品嘗!與飯一齊食又係另一種感覺!

當完美品嘗完雲丹盛後接住就係件手卷,師傅即時將火炙後嘅右口魚(鮫鰈)放在飯上,再卷成手卷交到手上,入口時嘅口感較晒肥美!

最後嘅果物就係靜岡縣嘅密瓜,並加上加威士忌,蜜瓜肉多汁香甜,還有陣陳威士忌香氣,加埋山形縣嘅桃,桃肉都係鮮甜多汁!
