I was fortunate to get a seat as a single diner as soon as I walked in because the place was pretty full at 9pm on a Monday evening, quite a few groups were waiting to be seated.  I was unfortunate to be stuck behind a big group of mainlanders ordering a lot of food, so that my wonton noodle took an interminable 20min to arrive.
The noodle itself was quite hard upon the first bite, rather different from the other shops, no doubt as a result of the bamboo-pressed dough which is the main selling point of this noodle place.  It took some time to get used to, but I did enjoy the texture and the fun of biting it.  The wonton was disappointing - rather woody texture of the pork mince and the shrimps were devoid of good taste, wouldn't say it's that fresh, perhaps it's just the style?
Portion size was so small that I had enough room to order a second bowl of noodles with beef tendon and brisket.  The taste was much better and the noodles were served a minute or two after my order - that's what I would expect for this type of restaurant, not the 20min wait like before.
Gailan with shrimp roe was well cooked and the taste was clean and the texture just right.
Other Info. : Not cheap for the portion size but it's an experience worth at least one try. Would I go back? unlikely.
