The tomato bread was a unique canvas for the smokey jamon, as well as the anchovies which were dusted lightly with queso and served with chargrilled grape segments. I love seeing white anchovies on tapas menus, they always act as a wonderful body for an array of interesting flavours and textures.

The tomato and tuna belly salad was easily my favourite of the night; I loved how the flavoursome tuna was lightly seared and tossed through the sweet and sour apple dressing. The heirloom tomatoes were thick cut, juicy and tasted unlike any other tomato I had ever had; it was an exceptional dish and something that I would return again and again for.

It was a jaw dropping moment to watch the paella proceed before us, with the pan still warm and exhibiting the most vivacious aroma. We were encouraged to dig into the cast iron pan, that was almost overflowing with shellfish and stir the sweet seafood through our fluffy mound of paella. The combination could certainly leave an impression on you; I loved the dish in it's entirety.

The paella may have been a hard act to follow but there was no faulting the perfectly cooked pork shoulder loin either. The potato puree was undeniably buttery, complimenting the crispy char of the pork, as well as it's meaty jus. Although I found that the end pieces were beyond my wellness preference, it was the ideal way to end a great meal on an unforgettable note.

I really enjoyed having such a relaxed and well paced dinner at Quemo - the service was sincere, extremely friendly and very considerate towards us having a little one at the table. I would have expected nothing less from a restaurant in Hong Kong, as it's very much so a part of their contemporary culture for fine restaurants to exhibit a family friendly standing. The patrons were of various demographics and it really did look like everyone else was having a great time too. I'd happily return to Quemo for lunch or dinner - it's a truly wonderful Spanish joint!
