I am a super fan of proper Bordeaux style Caneles - but surprising I have to admit, I have tried many in so many cities, and NOT EVEN once have I eaten Caneles which tasted like a proper canele/cannele when it wasn't made by a French person. The trend continues here. My 2nd batch of the French Lady's home made Caneles had a pretty decent mixture between Rum, Vanilla and Eggs taste. The inside was more bubbly than the 1st batch we tried. It's still a tad too wet, but I found it more satisfying than the next bests such as Monsieur Chatte and Boulangerie Bistronomique - all 3 of these shops are headed by French Chefs...

They will have a little bit more to go to convince me they are at Paris Dallouyau or Pierre Herme versions though, which are rather immaculate! ; )
