Dinner for 6. First seating: 6-8:30. Here’s what we had.Sour dough with saucisson (similar to salami) made with Black Pork of Bigorre, pigs are raised in semi-freedom in the mountains of the Pyrenees. Manager strongly recommended the smoked 秋刀魚 which is now in season. Didn’t like it, not as fatty as I had hoped and didn’t like those tiny bones. Another item that manager strongly recommended was the shirako (also in season), potato and black trumpet mushrooms covered with melted racelette and lardon (strips of fatty bacon). Not a fan either; bacon was way too salty but didn’t seem to cover the blandness of the shirako.

Persimmon with lardo and oscietra caviar.
Lardo is cured fat, usually from the back of a pig. It has a sweet, subtle pork flavor and texture like butter. Interesting combination with persimmon and caviar.

Roasted bone marrow with oscietra caviar.
Australian roasted wagyu shortrib and potato with lettuce and garlic confit. Again, way too salty. Potato was nice tho.

Can’t remember the taste, since had to gobble down everything in a rush given the 2-hour dining window (didn’t really start to order till 6:30). Even forgot to ask for my favorite canele. 😓
Corkage: $300 per bottle. Also had to finish my last glass in hurry.
In summary: Rushed meal. Prob won’t go for the 6pm seating again. Efficient and friendly service tho.
