It is a basic courtesy to serve a glass of water, at lease when asked, BUT NOT making ridiculous excuses not to give one with a view to force them to say yes to your ‘still or sparkling?’. Especially when you also serve and encourage your customers to drink wine. It is, in any customer’s view, a reasonable and basic request.
