The iberico pork chop was a juicy and beautifully marbled cut served on the bone. Seemingly sous vide to a beautiful light pink and seared to a lovely glossy crisp, retaining a moist tender bite that could almost melt in the mouth. The fragrance from the fat and very light gamey sweet flavours from the flesh leaves a welcomed lingering after taste..

The dessert "Drink in a Chocolate Cake" aka Chocolate Fondant, served with passion fruit sorbet, was well plated though looks unassuming and dry, with a fracture on the side.

Very commendable is the use of unsweetened dark chocolate which pairs perfectly with the strawberry and mango sorbet.

The dryness in the cake, I supposed was an over- attempt in getting a crisp outer layer which ended in the "Drink" being lapped up by a thirsty cake leaving a comparably trickle of a flow of chocolate fondue. The cake however was still delightfully crispy and the lack of fondue so happen to be a welcome after a heavy meal of good iberico.

The well balanced sorbet from natural fruit was a winner and complimented very well with the bold use of potent unsweetened dark chocolate.
