BUT the huge problem was the service!!

Rude is not strong enough to describe it.

Ordering started badly...almost preventing to order more seafood (to pack it to eat later if needed)
Instead of having the 5-6 dishes (to share) coming almost together,
they were coming ~one by one (less people in the kitchen...while a week day?).
In decades coming to Hong Kong restaurants,

it was the first time we were brought ... (totally unnecessary) forks!!  Shocking.
The waiters were extremely rude pressing us to eat faster

(removing some serving plates while they were still some seafood or (delicious) sauce).
Our plates and side plates were regularly replaced as if we were not eating fast enough.
Our friends, that came before to that place, were absolutely shocked too.

The prices seemed much higher, but I do not remember the previous times as it was BEFORE clearly very good value for money.

My decoding:
The pressure from management on staff (to trim costs) seems a logical explanation to the behaviour of the staff
(3 of them competing for rudeness).

My question is the following:

As the client turnover is obviously dropping, then that might affect the freshness of the seafood supply and trigger some corner cutting!
In a seafood restaurant, the result can be serious.

Conclusion:

Between the extreme rudeness of the staff and the potential risk on seafood supply,
we have decided to never eat at that place again.
