Amber jack crudo with citrus and sea urchin emulsion - Wow so colourful! The raw fish goes very well with the sweet and acidic citrus emulsion, the diced vegetable stems provide good crunch. When you taste the sea urchin emulsion after the citrus one it created a 180 degrees change in taste sweet acidic to fishy savory. Was thinking if the sea urchin and citrus emulsion is a good combination or not. I could certainly go with just the citrus one alone. But stand alone the sea urchin is definitely very nice.

Toothfish with zucchini mint cream - another work of art. So visually appealing. Tooth fish is perfectly cooked, topped with mild pimento spiced breadcrumbs. Crunchy mildly spicy top meets with very juicy delicate white flesh, what a match! Mild pasley minty cream with toothfish is perfect match. Could be the best tasting toothfish dish recently.

Berries, sorbet dessert - the glass plate makes it look as if the dessert is served on ice, fabulous. The fruits are all sweet but not too sweet with strawberry, raspberry, blackcurrent and blue berry. This should be a good punch of antioxidants haha
Sorbet is very mildly flavoured with beetroot.
Carmelised sugar wafer provides good crunch.
