Vietnam version sausage. As Vietnam was the colony of France, it adopted the French culinary cultures.Vietnamese modified the French sausages and make it to their own.



Chả lụ made of lean pork, potato starch, garlic, ground black pepper and nước mắm (fish sauce). The pork has to be pounded until it becomes pasty.



So it becomes bouncy and springy.



Collagenous pig skin dices are added into this ones to increase its texture.
