after a rather strenuous hike, my body was craving for something salty. read about a recently opened ramen shop, specializing in shrimp broth. so I asked the staff when this restaurant first opened and she informed me that it was last week.

as with many things Japanese, the presentation was pretty. i chose salted rich shrimp broth to see hiw shrimpy the soup would taste. when it came to my table, i tried to get a sense by smelling the broth...it kinda smelled like wonton noodle soup, not much of a shrimp smell at all.

of course the next thing is to taste the soup. it confirmed my initial conjecture. one slice of chashu (bbq pork), balanced meat and fat, scallion slivers, 2 halves of baby corn and half a marinated soft boiled egg. noodle was done to my taste, al dente. note there's a 10% service charge included in the final bill.

sigh, when will I find a replica of my original love...a restaurant in the town of niseiko, located in Hokkaido, Japan. such a delectable soup, smelling and tasting of rich shrimp shells and head...
