Pork neck is my safety net. Whenever I need to choose a cut for my noodles. So the same applies for my viet bread. It is usually great but today it wasn’t the best. Maybe it lacked sauce, everything was so dry that I felt like I was cutting my throat.

Even though I am a great believer in the consistency of pork neck for any kind of meal, I must say that the pork neck version trump the pork neck this time. Why? Well, because the toasted baguette it a bit on the dry side, so therefore extra fat from the pork belly just really brought everything into a perfect balance.
