4 of us for dinner. We all wanted to try for different reasons. I thought the seafood must be great since I walked past and saw the big tanks of live seafood in a relatively small shop; he wanted to try cos he read that the chef would get live seafood everyday; she wanted to try cos it was highly recommended by the Japanese chef of the omakase she frequented; and Alcoholic wanted to try anywhere offering free corkage. Restaurant had 10 seats. Apart from us, there were 3 tables of couples.
First came the soup (full of ingredients). Server pointed out the nutritious values of the various ingredients, in particular the 白玉木耳. Indeed I had several big pieces of 白玉木耳 in my soup, very yummy.
Lobster was first- fried bits with egg and bean sprouts etc. Meat was soft, felt light with the egg.
Next came the 蟶子- very big and juicy.
Next came the chilled abalone. Server reminded us to dip the abalone in their home made abalone sauce on the side. Abalone was big and juicy as well, not hard at all. Sauce had a strong abalone flavour oozing through. No need to use wasabi.
Then came the vegetables. Fresh and easy to chew. The fish broth was so so yummy.
Next came the fish. Done just right. Fish soy sauce was yummy.
Last but not least, the rest of the lobster made in a soup with rice. Server made sure none of us were pregnant, since they added the saffron flower (藏紅花) in the broth- bring the tiny red strips in the photo. Normally not a fan of the bouillabaisse, but this broth tasted so sweet and fresh, I finished all.
Chef came out to explain that he used prawns and crab meat to make the broth. (We noted that we tried a total of 3 soups already.) Chef went on to explain that whilst the 藏紅花is very good for the body, esp women- it’s not to be taken during menstruation or pregnancy. He showed us the box of flowers he used- imported from Spain.
Our server, a young lady, was highly attentive in explaining ingredients in each and every course.
In summary, this is one of the most talented and low key chefs I’ve met. He has a real passion for cooking and delivering only the best to his customers. Will certainly return to try his other dishes.
