Wash oxtail, and brush with a litlle salt, pepper. Heat oil in wok, and fry oxtail til surface turns golden in colour.
Heat oil again, fry garlic, ginger, shallots and onions, add in tomatoe segments and cook for a while. Add in oxtail and mix well.
Pour in stock and seasonings, and let cook, covered over small heat till oxtail is soft and sauce is thick.
