冰糖燕窩您就食得多啦,冰糖鹵鴨,您又識唔識呢?此鴨味濃肉嫩,甜甜地,又幾惹味,一家大細擔保食過尋味。
Ingredient and Portion
(一)光米鴨一隻(重約二斤半)
Seasoning
(一)老抽1/4 杯
(二)冰糖拍碎1 1/2 湯羹
(三)薑四片
(四)紹酒二湯羹
(五)八角一粒
(六)桂皮一片
(七)熟油三湯羹
(八)滾水三杯

鴨醃料:
(一)老抽1/4 杯
Method
(一)將鴨洗淨抹乾水份,用老抽1/4 杯搽勻鴨身內外,醃一小時。

(二)準備大瓦煲一個燒熱後,倒入油三湯羹,即加入薑四片,再將鴨放入反覆爆香,然後加入紹酒、老抽、八角、桂皮,最後放入冰糖及滾水,即加蓋用慢火炆煮約二小時,在炆煮過程中,最好每半小時將鴨反轉一次炆煮二小時後瓦煲內之汁湯應該只餘約3/4 杯。

(三)將鴨取出待冷,始斬成塊,排列碟中,再淋上原汁,即可上檯。
