Ingredient and Portion
(for 12 persons)
1/2 cup milk
1/2 water
3oz unsalted butter
1cup all-purpose flour
1 teaspoon sugar
1/2 teaspoon salt
2 eggs
Seasoning
忌廉
1.淡忌廉500ml加入30g糖打至忌廉狀即可。
2.放入唧袋備用。

Method
1.將牛奶、牛油、水開火煮溶。
2.篩入麵粉。
3.轉細火將麵團的水份收減,直至見到有少許麵團留在鍋上。
4.將雞蛋打好變成蛋液,逐少加入麵團。
5.當混合物被拉起時出現倒3角便可。
6.將混合物放入唧袋。
7.唧完後可噴上小量食水。預熱225度,225度焗10分鐘,然後180度15分鐘。
Tips
1.待麵團降溫至40至50度效果會更佳,太熱的話會令蛋液熟左,影響焗的過程。
2.麵團盡可能收乾表面水份,不可見到油身。
