These tea smoked eggs makes a very healthy snack item. This dish is originated from Shanghai, and the best ones are often made soft in the yolk.
Duck's eggs is slightly richer than chicken eggs, but can be substituted if duck's eggs are not available.
Ingredient and Portion
Duck's eggs 4pcs
tea leaves 2tbsp
slab sugar 1/2pc
rice 1 bowl
metal net
Seasoning
garlic pepper some
sesame oil (optional)
Method
Bring a pot of water to the boil,remove from heat, and put in duck's eggs. Wait until the water is cooed completely, and take out eggs. Remove shell and cut into half.
Place rice in wok,and put tea leaves and sugar on top of rice. Place net on top, and arrange eggs on the net. Turn heat on high. When sugar starts to melt,cover and let eggs smoke for 2-3 mins. Sprinkle with garlic salt (and sesame oil if desired) and serve.
Tips
The best smoked eggs are soft in the centre.
