Ingredient and Portion
材料(1):
牛油113克(置室溫軟化)、黃糖100克、糖漿85克、雞蛋2隻
材料(2):
麵粉480克、梳打粉半茶匙、鹽半茶匙、五香粉半茶匙、丁香粉半茶匙、玉桂粉半茶匙、黃薑粉半茶匙
糖霜材料:
糖霜1磅、他他粉半茶匙、蛋白3個
Method
1. 焗爐預熱至攝氏175度。把牛油及黃糖置碗內打至忌廉狀,然後拌入糖漿及雞蛋,加入已過篩的材料(2)一起拌勻。
2. 把所有粉狀材料加入後,用手搓成麵糰,使其變得較硬身。
3. 枱面灑上麵粉,用木棍把麵糰碾平至約1/8吋厚,並以曲奇模印出不同造型。
4. 把已造型的曲奇放在焗爐紙上,每件需相隔約1吋。把薑餅置焗爐內焗8至10分鐘。取出後置透氣架上待涼。
糖霜做法:
1. 把糖霜及他他粉置碗內過篩。
2. 加入蛋白,以電動攪拌器拂打約8分鐘至稠身,即可擠在薑餅上作裝飾。
