Remove cover of crab body. Discard intestines and other organs, rinse clean then cut crab into 4 pieces. Heat oil in wok, then shallow fry crabs for about 3 minutes. Take out and drain when crab is cooked (changes colour).
Pour away some oil, laving only about 4 tbsps, then add in diced ginger and seasonings, bring to the boil, then put crab in and stir fry until well combined. add wine, stir well, then sprinkle with diced scallions. Place on serving plate and serve.
