「IC電磁爐.飯.堂」試煮班的何師傅教授學員煮的椒鹽鮮魷香脆可口,製成後加點紅椒粒及淮鹽便可享用,百般滋味盡在不言中!
Ingredient and Portion
鮮魷筒 240克
雞蛋 1隻
生粉 少許
紅椒粒 少許
Seasoning
淮鹽 少許
豆板醬 少許
紹酒 少許
蒜茸 少許
Method
1.將鮮魷筒洗淨,先直切再斜切得出菱形花紋,再將魷魚切開成三角形
2.將電磁爐溫度調至中溫(約160度),鮮魷筒用滾水微灼、盛起備用
3.加入適量調味料、雞蛋、生粉
4.將電磁爐設為高溫(約200度),加熱適量油,將鮮魷筒下鑊炸至金黄熟透撈起
5.以紹酒下鑊,並加入豆板醬
6.將紅椒粒、淮鹽炒香,加入已炸鮮魷花撈勻,加熱後上碟便可
Tips
電磁爐十分適合於烹調煎炸食物。由於電磁爐比較容易控制油溫,建議在油炸食物時將電磁爐溫度保持在180度,保證炸出來的食物顏色金黃、而且口感酥脆。
