茄子三文魚千層配青檸汁

此食譜有助預防心血管病,因三文魚含豐富奧米加3脂肪酸,有助稀釋血液,番茄則含維他命A及C,有助強化血管壁,延緩血管硬化。
Ingredient and Portion
烚蛋 2隻
茄子 2條
三文魚 8片/160克
番茄 1個
無鹽香草碎 少許
橄欖油 1湯匙
雞湯 1杯
青檸汁 2茶匙
黑椒粉 少許
Method
1. 每條茄子横切成10塊厚片。
2. 下半湯匙橄欖油煎茄子至金黃色。
3. 將三文魚切成薄片,以無鹽香草碎醃20分鐘,煎熟三文魚。
4. 將烚蛋切片;將一片烚蛋放在一片茄子上,然後放上三文魚,每件做兩層,可做四件。
5. 番茄切粒,堆放於頂層。
6. 下橄欖油煮熱汁料,煮滾後倒在千層茄子上,再放上莞荽碎,即成。
