This soup is ideal the whole year round especially for people in Hong Kong as white fungus is said to have the function of "clearing out dirt" from inside the body.
Ingredient and Portion
Lean pork meat 1/2kg
carrot 3-4pcs
White fungus 1pc
Seasoning
Salt to taste
Method
Saok white fungus in water, cut away the stiff part and tear into a few pieces.
Peel carrots, and cut into several smaller pieces.
Blanch pork in boing water with a few pieces of ginger, and take out.
Bring some water to the boil , add in the above ingredients and boil again, then turn to low heat and boil for another 2-3 hours, then seaon with salt.
