Easy potato salad

Other than the mayonaise loaded version of potato salad, this version can be a lighter and healthier option. It requires little cooking skills, and makes a good party dish or side dish.
Ingredient and Portion
potatoes 4pcs
green onions 4 stalks
parsley (chopped) 2tbsp
lemon juice 2tbsp
minced garlic 1tsp
Seasoning
salt 1/2tsp
some pepper
olive oil 6tbsp
Method
Boil potatoes with skin on until cooked thoroughly. Drain well, and let cool.
Use only the young parts of the green onions, and cut them finely.
Remove skin from potatoes, and cut into slices about 1/2 cm thick. Mix well with chopped parsley and chopped green onions.
Combine lemon juice, minced garlic and salt, add some pepper, and pour in olive oil slowly, stirring it all the time.
Pour well combined dressing over potato slices and mix well. Add extra salt if preferred.
Tips
Water must be enough to fully cover the potatoes when cooking potatoes.
