Fish Fillet in Lemon Sauce

What most restaurants sell is often chicken in lemon sauce. Here, we swap salmon fillets for chicken fillet, andthis combination is simply marvelous.
Ingredient and Portion
Salmon fillet (cut into thick slices) 300g
Lemon 1 pc
egg 1pc
cornstarch 1/2cup
water 1/2cup
Seasoning
water 100 ml
Fish stock cube or chicken stock cube 1pc
sugar 5tbsp
sesame oil 1tsp
salt 1tsp
rice vinegar 50ml
lemon juice 3tbsp
pinch of pepper
Method
Wash salmon fillet, wipe dry, marinade with salt,pepper and lemon juice.
Beat eggs. Place fish pieces in egg mixture and pat with a thin layer of corstarch. Deep fry or stir fry fish in oil, discard and drain oil.
Place in serving dish.
Heat water in pan, dissolve stock cube in water and add in remaining seasonings and cook until boils. Use some cornstarch mixed with 1 tbsp of water to thicken the sauce. Pour on fish fillets and serve.
