除了傳統瑞士風味,芝士火鍋其實有很多變化,選用不同芝士和配料,就可炮製風味獨特的芝士火鍋。
Ingredient and Portion
Fontina芝士1磅(磨碎成約4杯)
粟粉1湯匙
白酒1杯
牛油4湯匙
新鮮黑菌(切薄片4安士或黑菌醬)
鹽及胡椒適量
黑菌油適量
乾果、小麵包片、露筍、熟薯仔粒
Method
1. 於中型平底鍋上放白酒及牛油,以中火煮滾,再調校至微火慢煮。
2. 將芝士及粟粉於大碗中調勻,慢慢倒入煮好的白酒中攪拌,逐少放入直至融掉後再添加,攪拌至完全均勻,熄火後加入黑菌片或黑菌醬攪勻,以鹽及胡椒調味。
3. 將芝士漿轉放至微暖的芝士火鍋盆之中,加入黑菌油。
4. 隨意把乾果、小麵包片、露筍、熟薯仔粒沾上芝士汁即成。
