Ingredient and Portion
Shrimps 320 g
Egg white 2 pcs
Preserved salted egg (separated) 1 pcs
Parsley some
Pepper some
Salt some
Cornflour some
Method
Wash and shell the shrimps, pat dry and marinate with cornflour, pepper and salt.
Mix egg white and salted egg white.
Rinse the parsley, leave for later use.
Heat some oil, add in shrimps, stir very quickly until just done.
Heat some oil until warm, fry the mixed egg white until set. Put back the shrimps and stir well, sprinkle with steamed, finely chopped salted egg yolk, garnish with parsley and serve immediately.
