Ingredient and Portion
Ingredients:
fresh yellow oiled noodles (YAU-MEEN) 210g
shredded pork 100g
cooked shrimps 100g
eggs, beaten 2 pcs
beansprouts 50gm
shredded cabbage or chives 50g
shallots 2pcs, diced
Seasoning
Seasonings:
fish sauce or dark soya sauce 2 tbsp
sugar pinch
Method
Heat some oil in pan,saute beansprouts and cabbages in shallots. Set aside and reserve for later use.
Heat some oil again,fry pork until done.
fry eggs into a thick piece of omlette, then cut into shreds.
Heat 1 tbsp of oil in wok, stir fry noodles until soft and add in rest of ingredients and seasonings, stir well and serve.
Tips
Oiled noodles are available at fresh noodle stores. They are yellow in colour and round in shape, resembling the shape of spaghetti. Dried versions are sometimes available in supermarkets, but they must be boiled and rinsed under cold water before using it in this recipe.
