This cold dish can be eaten on its own, or as a topping for cold noodles. For extra spiciness, add 1-2 pcs of chopped red chili and sprinkle on top.
Ingredient and Portion

300g chicken meat
230g cucumber
150g carrot
1 tsp chopped garlic
1 tbsp chopped green onion
some sesame
Seasoning

2 tbsp red pepper oil
1 tsp salt
Method

Parboil chicken meat and tear into tiny and long strips. As it is still hot, add salt for seasoning till cold. Shred cucumber and peeled carrot. Parboil a short while. Remove and drain till cold.
Heat red pepper oil to fry chopped garlic. Remove and cool.
Mix the cooled chicken strips, shredded cucumber, shredded carrot, chopped green onion and red pepper oil evenly. Spray sesame on the top. Serve cold.
