Hot spicy codfish with garlic

Codfish is popular for its flaky, oily texture, and is often grilled or panfried to seal in its moisture. The sauce in this recipe gives not only a very fragrant smell, but also a very unique taste and texture to the fish.
Ingredient and Portion

2 slices of codfish (about 450g)
8-10 braids of garlic
1 tbsp hot bean paste
1 tbsp diced spring onion
1 tbsp dessicated coconut
Seasoning
Marinade:

2/3 tsp salt
1/2 tbsp ginger juice
1/2 tbsp wine
a pinch of pepper


Seasoning:

3/4 cup water
1 1/2 tbsp light soya sauce
1/2 tbsp sugar
a dash of sesame oil
a few shakes of peper
Method

Rinse codfish pieces and wipe them dry. Blend marinade and brush on carp pieces. Leave them for about 15 minutes. Chop garlic for later use.
Pat marinated codfish with plain flour, fry pieces in plenty of oil till golden and done. Remove and soak up excess fat.
Heat 2 tbsp oil to saute garlic and hot bean paste. Pour in seasonings and bring mixture to boil. Put in fried codfish, lower heat and stew ingredients for a while. When sauce becomes rich, dish up codfish pieces. Add dessicated coconut and diced spring onion to remaining sauce. Pour sauce over fish and serve hot.
