Ingredient and Portion
南瓜 300克
西米 50-60克
粟米 適量
椰漿 60毫升
北海道牛奶 15-20毫升
冰糖 90-100克
Method
1.將西米放入滾水,開回中火煲15-20分鐘至半透明(會變得很稠)
2.關火蓋上蓋,將西米焗至透明,拿起用凍水沖過篩去水,放入雪櫃備用
3.冰糖加入500ml滾水煮溶
4.清洗南瓜去皮及去核,然後切粒
5.切好的南瓜粒放入於冰糖水中,煮至軟身
6.拿出一半南瓜粒備用
7.將鍋中餘下的南瓜粒及糖水關火,用打蛋器(或攪拌器)打成南瓜蓉,然後開回中火,倒入適量椰漿攪拌
8.把另外拿起的南瓜粒,放在雪櫃西米及粟米粒放回到糖水中開大火煲滾
9.最後開回中火,不停攪勻然後加入北海道牛奶使糖水更香,煲至3-5分鐘即成
Tips
1.椰漿可除個人口味增加或減少
2.加入北海道牛奶會令糖水更香,份量可視乎個人口味增加或減少
